Delicious Mexican treat anytime you are in the mood for a good eat. Cheesy, warm, toasty, and crispy appetizer. Done with a twist for all you vegans.
With this quick and easy recipe, you will have a delicious treat in an hour or less. Let's get started!
Peel and boil about 4 medium size potatoes and mash it like so.....
Add 3-4 teaspoonfuls of Vegenaise, 1 teaspoonful of salt, 2 teaspoonfuls of sugar, 1 teaspoonful of cumin, half teaspoonful of coriander powder, half teaspoonful of oregano powder, and half teaspoonful of black pepper. Make about a quart size bowl of mashed potato.
Prepare the following: bell peppers, tomatoes, cilantro, and black olives.
Put flour tortilla on plate and put about 3 spoonfuls of mashed potatoes on the flour tortilla and spread on half of the tortilla.
Add tomatoes and bell peppers
Add black olives, cilantro, and vegan cheese. I use vegan cheese but feel free to add any cheese of your choice.
Fold tortilla in half.
Heat up a frying pan on medium heat and add 1 teaspoonful of oil. Put quesadilla in the pan and fry for about 2-3 minutes or until golden brown.
Flip over and fry the other side until golden brown.
Voilà!!!! You get this warm, crispy, cheesy, and tasty treat. Enjoy....
