Hot pockets are flaky, crispy, delicious, melt in your mouth delight. I haven't had these in years. I want to share this easy recipe so that everyone can enjoy this scrumptious treat!

Remove puff pastry sheets from freezer and thaw as directed on package (about 40 minutes).
Cut carrots and potatoes into small cubes.
Prepare peas and corn.
Saute carrots and potatoes in frying pan for a few minutes then add corn and stir-fry until slightly cooked. Add peas and cook for a few more minutes.
Then add 1 teaspoonful of salt, 2 teaspoonfuls of sugar, 2 teaspoonfuls of curry powder, and some black pepper.
Stir well and transfer to a bowl. Delicious curry filling ready to go.
Cut puff pastry sheets into four pieces. Take one piece and add prepared curry filling, cilantro, and vegan cheese. I use Daiya cheddar vegan cheese shreds.
Fold diagonally and use fork to seal edges.
Preheat oven to 400° F for 5 minutes. Set uncooked hot pockets on baking pan. Bake at 400° F for 15-20 minutes or until golden brown.
Voilà!!!! You get this flaky, buttery, mouthwatering treat in 15 minutes.....
